
Ingredients (use vegan versions):
- 6 large Italian mushrooms
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large onion (I used a yellow)
- 2 tablespoons oil
- dash salt
- fajita tortillas
- some water
Directions:
Cut mushrooms in slices removing stems, set aside.
Cut onion and peppers into slices. In a skillet
heat oil add peppers and onion. Cook until almost
caramelized, add salt, mushrooms and water.
Water should dissipate. Remove from heat and
enjoy.
