
Ingredients (use vegan versions):
- vegan pesto
- mushrooms
- olives
- tomatoes
- whole wheat roll/bagel
Directions:
Spread the pesto on the vegan bread, on both
sides.
Stir fry the mushrooms in a bit of olive
oil.
Cut olives and tomatoes into rings.
then put all three veggies on top of
the pesto and put in the toaster oven
for about 3 minutes, just to get a bit
crispy.
Enjoy.
