Black Bean and Millet Salad recipe
Black Bean and Millet Salad picture


Ingredients (use vegan versions):


  • 2 1/2 cups milet cooked
  • 2 large tomato, chopped
  • 1 medium onion, chopped
  • 1 cup green beans, or one whole cucumber
  • ***DRESSING****
  • 1/3 cup water
  • 3 tablespoon lemon juice
  • 2 teaspoon vinegar balsamic
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin


Directions:


Chop string peas. In a very large
bowl. combine all dry Mix well. Add
dressing, mix, and chill.


IF USING CUCUMBER: Peel several strips
(it should lok striped) and cut it
lengthwise into 4 pieces. Remove seedy
partfrom the pieces, and but them into
1/2 slices. Add to salad.
