
Ingredients (use vegan versions):
- 2 med. zucchini
- 3 med. onions
- 3-4 med. potatoes
- 2 green tomatoes
- 2 red tomatoes
- garlic salt to taste
- pepper to taste
- 1/4 cup canola oil
- steamed rice
Directions:
Slice all vegetables. Combine in large skillet heated with
oil. Fry on medium heat until tender. Add garlic salt and
pepper to taste. Serve over rice.
