
Ingredients (use vegan versions):
- 1/3 cup semi-sweet chocolate bits (check to make sure there is no milk)
- 1/4 cup non-hydrogenated vegan margarine
- 1/2 cup vegan soymilk
- 2 cups peanut butter
- 1 teaspoon vanilla extract
- 3 cups dry oatmeal
- 2 cups shredded coconut
Directions:
In a large sauce pan, melt chocolate bits and
margarine, then add milk and bring to boil.
After mixture boils for two minutes, add vanilla
and peanut butter and heat until peanut butter is
melted completely. Meanwhile, stir oatmeal and
coconut together in a bowl. After the
peanut butter is mixed in completely with the
milk mixture, add in oatmeal/coconut and stir it
until dry ingredients are coated. Drop by
heaping spoonfuls onto waxed paper and let
cool.
I don't know the nutritional information on
this, but I wouldn't eat them in mass
quantities, as they are pretty fatty. They
taste good, though, so enjoy!
