
Ingredients (use vegan versions):
- 1 bunch of kale
- 450 g whole wheat or Kamut® pasta (penne or rotini are good)
- 1 tablespoon olive oil, or more to taste
- 2-3 pieces of morrocan lemon, minced fine
- 1 teaspoon dried oregano, or 2 tblsp fresh
- fresh pepper, to taste
Directions:
Put on large pot of water to boil. Rinse and roughly chop
kale, mince morrocan lemons. Cook pasta until nearly done,
and add kale to the pot for the last 2-3 minutes. Drain
pasta and kale into a colander, and add the oil and diced
lemon to the pot. Toss the pasta and kale in the pot, add
oregano and top with fresh pepper.
Delicious and easy.
This is also great with roasted garlic if you don't have
morrocan lemons hanging around your house!
