
Ingredients (use vegan versions):
- 2-3 zucchini
- 5 red potatoes
- 1/4 onion
- 1 sprig rosmary (to garnish)
- salt and peper to taste
- lots of olive oil (I am an approximator when cooking)
- a pinch or garlic powder
Directions:
Saute onion and zucchini in the olive oil untill golden brown
and smelling good. Wash and dice potatoes and fry them too.
Then line your bowl with zuchini and pour in the
potato/onion/zucchini preparation.
Also, first time I made
this I accidentaly droped in a clove of garlic (whole), and It
tasted even better. I also used two mushrooms but it ruined
the meal in my opinion.
